Here’s what you’ll need! 1 package of No Evil Foods Comrade Cluck Frozen waffles (8-12 waffles) Romaine lettuce Tomato Pickled jalapeños (optional) 1-2 cups panko bread crumbs 2 cups vegetable oil Batter 1 cup chickpea flour 2 tsp. dried oregano 2 Tbsp. smoked paprika 1 Tbsp. garlic powder 1 tsp. cayenne pepper ⅔ cup non-dairy milk Maple Dijon Dressing 3 Tbsp. Dijon mustard 2 Tbsp. maple syrup ¼ tsp. pink salt ¼ tsp. black pepper _____________________________________________ RECIPE: In a bowl mix together all batter ingredients listed above. This should resemble a pancake like batter. In a small saucepan heat 2 cups of vegetable oil. If your oil is too high transfer oil into a larger size pot (this oil will get very hot, overcrowding or spilling oil can cause potential danger). Place 1-2 cups of panko breadcrumbs into a second bowl and place next to your batter. Take larger chunks of Comrade Cluck, dip into batter then coat in the panko and carefully drop into your oil. Only place about 3-4 pieces into the oil at a time, making sure not to overcrowd the pot. Once golden brown place on a plate lined with paper towel to remove excess oil. Continue this process. Once largest chunks have been fried, place smaller bits into the batter and squeeze them together with your hands. The batter will help create a larger chunk that you can then dip into the panko, again squeeze to keep combined and drop into the oil. Continue this process until all of your smaller chunks have been made into larger bites. Turn off burner, discard oil in the garbage once cooled **do not pour down the drain** At this point you can toast your waffles, slice tomato and have your romaine and pickled jalapeño ready for assembly. In a bowl mix together Dijon mustard, maple syrup, salt and pepper. Set aside. Now it’s time to assemble! Place a toasted waffle down on a cutting board, stack romaine lettuce, tomato slices and jalapeños. Top with fried Comrade Cluck pieces and drizzle with your Maple Dijon dressing. Place second waffle on top and enjoy! This will make you about 4-6 large sandwiches. Use mini waffles and turn these into the perfect sliders for a party!
