Lemony Dill Soup
Soup season is upon us, and nothing is better than a creamy flavorful bowl of comfort :)
This soup is super easy and packed full of antioxidants, fiber, protein, potassium and more!
Ingredients:
(serves about 4)
1 yellow onion diced
2 cups vegetable stock
2 cans of any white beans of choice
1 large potato cubed
2 Tbs. dried dill
2 Tbs. vegan butter
1 tsp. pink salt
1/2 tsp. garlic powder
juice and zest of 1 lemon
Olive oil
Recipe:
In a pot bring your cubed potato to a boil and cook until soft, set aside. dice onion and caramelize in a pot with olive oil. Drain and rinse 2 cans of white beans and add in to caramelized onions. Cook for about 3-5 minutes. Add in 2 cups of vegetable broth.
Pour mixture into a blender and blend until creamy, add back into pot. Add potatoes, dill, garlic powder, salt, and lemon/lemon zest. Cook on low for about ten minutes allowing all flavors to combined.
