What in the Tempeh!?
Ok, so we all have heard of Tofu. The good and the bad, but how many of us actually grew up hearing about Tempeh? I know for me this was a new form of protein that I only really discovered once switching over to a plant based lifestyle.
Like tofu, tempeh is a soy product. Less processed than its sister protein tofu, tempeh is fermented soybeans. Tempeh is slightly higher in calories than tofu but its hearty texture provides more protein and fiber than tofu.
So how do you use it you ask? Personally, I love marinading a package of tempeh in a smokey marinade and slicing it for thing like "bacon-less"LT's or cubed and added to a creamy pasta dish.
If you find tofu mushy and boring or you just cant get on board with it, definitely give tempeh a go. It a protein packed blank canvas so... create!
Smokey Tempeh Marinade
1/2 cup soy sauce
2 Tbs. olive oil
3 Tbs. maple syrup
1 Tbs. liquid smoke
1 tsp. garlic powder
3 scallions - diced
Allow minimum of 20 minutes to marinade, cook in a pan on a low medium heat with remaining liquid, allowing the marinade to thicken and coat the tempeh
