Rainy Day FIG BARS


Well the time has come, and its fig season ! One of my favorite fruits of all time.. and they make for great snacks, desserts and bars :)

These are packed with great healthy fats and are the perfect energy bite to start your day. You could opt to make these bars completely raw vegan simply by skipping the oven, and stove top steps that will be listed below.

So heres what you need:

CRUST

6-8 fresh figs

1 cup walnuts

1/2 cup oats

2 Tbs. ground flax seed

1/4 tsp. salt

FILLING

1 cup creamy peanut butter

1/4 cup coconut oil

1/8 cup agave

optional ** pumpkin seeds and fresh figs for garnish

** Pre-Heat oven to 350 farenhiet

In a food processor combined all ingredients listed above for the crust, making sure to cut off all stems of the figs. Blend until all ingredients are fully combined and form a wet dough.

Place mixture in an oven safe glass dish (I used a 8 inch pie dish) and spread out evenly. Bake in the oven for 15-20 minutes until edges start to brown.

on LOW heat, stir together in a small pot all ingredients listed for the filling, allowing all ingredients to thin and combined. Make sure you do not burn the peanut butter, turn off stove top once everything is fully combined.

Once crust is cooled, pour peanut butter filling on top of the crust and place in the freezer for about 1 hour to set.

** Before placing in the freezer to set, this is the time when you can add any other healthy nuts fruits or seeds you would like in your bars. I chose to add pumpkin seeds and some sliced fresh fig.

Once your pie dish is fully set and hardened you may now slice it into the desired size of your bars. From this point they should be stored in your refrigerator.
